Not actually a cereal, but rather belonging to the Polygonaceae family, buckwheat is an excellent source of fibre, minerals such as phosphorus, calcium, iron, selenium, copper, magnesium, manganese and a higher percentage of potassium compared to all cereals. It also contains essential vitamins, such as group B vitamins B1, B2, PP and B5, and is rich in essential amino acids.
